Quick and easy vegan recipe for a summer bruschetta. Great as a starter or a canape with friends round for drinks.


Seasonal summer bruschetta

Recipe serves 8 portions 


  • 4 tomatoes - chopped
  • 1/2 red onion – finely chopped
  • 1 tsp All Italian blend
  • 1  tbsp balsamic vinegar
  • 2 tbsp olive oil
  • sliced ciabatta or baguette
  • 5 fresh basil leaves


  1. Finely chop tomatoes and red onion and mix with All Italian blend, balsamic vinegar and olive oil.
  2. Add a pinch of salt, stir well and leave for least 10 minutes for flavours to combine.  Serve on toasted baguette or ciabatta - roughly tear the basil leaves and decorate.
